Coffee and Walnut Crack Pie

Sorted Food makes a coffee and walnut treat, inspired by Momofuku's famous Crack Pie.


  • For the crust: 55 grams Butter, 35 grams light brown sugar (+2 tablespoon), 1 1/2 tablespoon caster sugar, 30 grams Beaten eggs, 40 grams flour, 30 grams rolled oats, 20 grams chopped walnuts, 30 grams butter

  • 150 grams Caster sugar

  • 100 grams melted butter

  • 80 milliliters double cream

  • 10 milliliters Cold espresso

  • 1 drop vanilla extract

  • 100 grams brown sugar

  • 4 egg yolks

  • 1 handful blitzed walnuts

  • 1 handful icing sugar to dust

  • 4 glasses iced coffee to serve


  1. Preheat the oven to 190°C.

  2. Grab a bowl and add the 55 grams of butter, 35 grams of brown sugar and caster sugar for the crust.

  3. Beat until light and fluffy.

  4. Add the beaten egg and combine.

  5. Combine the flour and a good pinch of salt into the wet mixture whilst beating.

  6. Chuck in the oats and walnuts and stir through.

  7. Spread the mixture over a baking tray and bake in the oven for 20 minutes, turning halfway through, until golden brown.

  8. Allow the mixture to cool fully before crumbling a little.

  9. Add the 30 grams of butter and the 2 teaspoons of brown sugar to a food processor with the crumbled cookie and blitz until just combined and the mixture holds together.

  10. Press the cookie mixture into a 22 centimeters cake tin and set aside for later.

  11. Turn the oven down to 180°C.

  12. Whisk together the caster sugar, brown sugar and melted butter in a bowl.

  13. Pour in the double cream, espresso and vanilla extract, then combine everything completely.

  14. Whisk in the egg yolks and pour the filling onto the crust.

  15. Bake the pie for 20 minutes before turning the heat down to 160°C and cooking for a further 10 minutes, until it has a slight wobble.

  16. Cool in the fridge until completely chilled, then dust with icing sugar and a little extra chopped walnuts.

  17. Slice and serve with the iced coffee.
